Recipe Inspiration from The French Fox

If you can’t make the trip to Arran right away, here are two recipe ideas inspired by The French Fox’s style — you can bring a bit of that bistro-street-food feel to your kitchen:

1. Confit de Bœuf with Pomme Purée & Mustard Mayo

Ingredients:

  • Beef shin or other slow-braising cut

  • Red wine, Dijon mustard, beef stock, aromatics (onion, garlic, thyme)

  • Potatoes (for purée), butter, cream

  • Arran (or local) mustard for the mayo

  • Crispy onions (store-bought or homemade)

Method:

  1. Brown the beef pieces, de-glaze with red wine, add stock + mustard + aromatics and braise until tender (2-3 hrs).

  2. Meanwhile, boil potatoes, mash/whip with butter & cream to make a silky purée.

  3. Mix mayonnaise and a good dollop of mustard to create the mustard mayo.

  4. Plate: purée, shredded beef in sauce, a spoon of mustard mayo, sprinkle crispy onions.

2. Croque Épinards (Vegetarian)

Ingredients:

  • Thick sliced sourdough bread

  • Cheddar cheese, béchamel sauce (butter, flour, milk), creamed spinach, tomato slices

  • Optional: crispy onions

Method:

  1. Prepare béchamel: melt butter → add flour → whisk in milk until thick; season.

  2. Stir in spinach until coated.

  3. Layer bread, spinach mix, tomato, cheddar; top with another slice and more cheddar.

  4. Grill until golden and bubbling; top with crispy onions if desired.

These recipes capture the essence of The French Fox: familiar comfort with an elevated twist, high-quality ingredients, and a bit of French soul.
